8 oz (225g) spaghetti or fettuccine

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Garlic Sauce: In a large skillet, heat the olive oil and unsalted butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn it.

      Make it Creamy: Pour in the heavy cream and stir to combine. Allow it to simmer for about 3–4 minutes until slightly thickened.

        Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

          Combine the Pasta and Sauce: Add the drained pasta to the skillet, tossing to coat in the creamy garlic sauce. If using, sprinkle in red pepper flakes for a spicy kick. Season with salt and pepper to taste.
