Ingredients

1 lb ground beef (or turkey)

1 cup elbow macaroni

1 can (15 oz) chili beans, undrained

1 can (10 oz) diced tomatoes with green chilies

1 cup beef broth

1 cup shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions

Sauté the Meat: In a large pot, over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a wooden spoon. Drain excess fat if needed.

Add Aromatics: Stir in the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

Mix in Spices: Add the chili powder, cumin, salt, and pepper. Stir to coat the meat and then cook for another 2 minutes to enhance the flavors.

Combine Ingredients: Pour in the diced tomatoes with their juices, chili beans, beef broth, and elbow macaroni. Stir well to combine all ingredients.

Cook the Mac: Bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 10-12 minutes, stirring occasionally, until the macaroni is tender and has absorbed some of the liquid.

Add Cheese: Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.

Serve: Dish up the chili mac into bowls. Garnish with fresh cilantro or green onions if desired.
