2 packs of instant ramen noodles (discard seasoning packet)

1 cup broccoli florets

1 cup bell peppers (mixed colors), sliced

1 cup snap peas

2 carrots, julienned

3 green onions, sliced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 clove garlic, minced

1 teaspoon ginger, minced

Sesame seeds for garnish

Optional: chili flakes for extra heat

Cook the Noodles: Bring a pot of water to a boil. Cook the ramen noodles according to package instructions for 3-4 minutes until al dente. Drain the noodles and set aside.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for 30 seconds until fragrant.

      Add Vegetables: Toss in the broccoli, bell peppers, snap peas, and carrots. Stir-fry the vegetables for about 4-5 minutes until they start to soften but still retain their crunch.

        Combine Ingredients: Add the cooked ramen noodles to the skillet/wok along with the soy sauce and sesame oil. Gently mix everything together, ensuring the noodles and vegetables are evenly coated with the sauce. Cook for another 2-3 minutes, allowing the noodles to get a bit crispy.

          Finish with Green Onions: Stir in the sliced green onions and cook for an additional minute. If desired, sprinkle chili flakes for extra heat.

            Serve: Remove from heat, serve hot, and garnish with sesame seeds.
