Ingredients
  

2 cups cooked shredded chicken

1 cup ranch dressing

1 cup shredded cheddar cheese

½ cup sour cream

1 can (10 oz) diced tomatoes with green chilies

8 small flour tortillas

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

Salt and pepper to taste

Fresh cilantro for garnish

Optional: sliced jalapeños for extra heat

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large bowl, combine the shredded chicken, ranch dressing, half of the cheddar cheese (½ cup), sour cream, diced tomatoes, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.

      Assemble Enchiladas: Spoon about ¼ cup of the chicken mixture onto each tortilla, roll them up tightly, and place seam-side down in a greased 9x13 inch baking dish.

        Top With Sauce: Pour any remaining chicken mixture over the enchiladas in the dish. Sprinkle with the rest of the cheddar cheese on top.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

            Garnish and Serve: Allow to cool for a few minutes before serving. Garnish with fresh cilantro and optional sliced jalapeños for extra heat.
