Ingredients

2 pounds baby potatoes, halved

1 cup ranch dressing

1/2 cup sour cream

1 cup celery, diced

1/2 cup red onion, finely chopped

1/2 cup dill pickles, chopped

1 cup cheddar cheese, shredded

1/4 cup fresh chives, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Instructions

Begin by washing the baby potatoes thoroughly. In a large pot, add the halved potatoes and cover them with water. Add a pinch of salt and bring to a boil over medium-high heat.

Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender. Be careful not to overcook them.

Drain the potatoes and let them cool completely. Once cooled, transfer them to a large mixing bowl.

In a separate bowl, combine the ranch dressing, sour cream, garlic powder, onion powder, salt, and pepper, mixing well.

Pour the dressing mixture over the cooled potatoes and gently fold it in, ensuring all the potatoes are evenly coated.

Add the diced celery, red onion, dill pickles, cheddar cheese, and chopped chives to the potato mixture. Mix gently until all ingredients are well incorporated.

Taste and adjust seasoning as necessary, adding more salt, pepper, or ranch dressing according to your preference.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld beautifully.

Serve chilled, garnished with additional chives or a sprinkle of paprika if desired. Enjoy your creamy and tangy Ranch Potato Salad!
