1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup fresh raspberries (you can use frozen, but thaw and drain)

½ cup rolled oats

½ cup brown sugar, packed

1 cup almond flour

½ teaspoon cinnamon

Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes with an electric mixer.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon.

          Mix Dry into Wet: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Don't overmix.

            Fold in Raspberries and Oats: Gently fold in the fresh raspberries and rolled oats using a spatula, being careful not to mush the raspberries too much.

              Prepare Crumble Topping: In a separate small bowl, combine the brown sugar, almond flour, and a pinch of salt. Use your fingers to mix until crumbly.

                Scoop Cookies: Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets about 2 inches apart.

                  Add Crumble Topping: Sprinkle a generous amount of the crumble topping on each cookie dough ball.

                    Bake: Bake for 12-15 minutes until the edges are lightly golden. The centers will look slightly underbaked, but they will firm up as they cool.

                      Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
