1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup buttermilk

Zest of 1 lemon

1 cup fresh raspberries (plus extra for garnish)

For the lemon frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

A pinch of salt

For raspberry sauce (optional garnish):

1 cup fresh raspberries

2 tablespoons sugar

1 tablespoon lemon juice

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    Make the cupcake batter:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Beat in the eggs one at a time, followed by the vanilla extract and lemon zest.

          - In another bowl, whisk together the flour, baking powder, baking soda, and salt.

            - Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.

              - Gently fold in the fresh raspberries, being careful not to break them too much.

                Bake the cupcakes:

                  - Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.

                    - Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
