Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 carrot, finely diced

1 red bell pepper, finely diced

1 can (14 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and sauté for about 5 minutes, until softened and translucent.

Stir in the minced garlic, diced carrot, and red bell pepper, cooking for another 5-7 minutes until the vegetables are tender.

Add the crushed tomatoes, tomato paste, dried basil, dried oregano, and red pepper flakes (if using) to the pan.

Stir everything together and bring the sauce to a simmer.

Lower the heat and let it simmer for 20 minutes, stirring occasionally.

Add the balsamic vinegar and season with salt and pepper to taste, cooking for an additional 5 minutes.

Remove from heat and allow to cool slightly before blending if you prefer a smoother sauce or keep it chunky.

Serve hot over your favorite ravioli and garnish with fresh basil leaves.
