1 package of fresh or frozen cheese ravioli (about 12 oz)

6 cups vegetable broth

2 cups kale, chopped

1 cup baby carrots, sliced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, for garnish

Grated Parmesan cheese, for serving (optional)

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and cook for an additional 1 minute, stirring to avoid burning.
