3 large heirloom carrots (orange, purple, and yellow), julienned

1 cup red cabbage, shredded

1/2 cup fresh parsley, chopped

1/4 cup raw sunflower seeds

1/4 cup raisins or dried cranberries

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

In a large mixing bowl, combine the julienned carrots and shredded red cabbage.

    Add the chopped parsley, sunflower seeds, and raisins (or dried cranberries) to the bowl, evenly distributing them amongst the carrots and cabbage.

      In a separate small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.

        Pour the dressing over the salad ingredients and toss gently to ensure that everything is evenly coated.
