2 cups cooked jasmine rice (preferably day old)

1 lb shrimp, peeled and deveined

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 bell pepper (red or green), diced

1 onion, finely chopped

3 cloves garlic, minced

2 green onions, chopped (for garnish)

1 cup frozen peas and carrots mix

2 large eggs, lightly beaten

2 tablespoons soy sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare Ingredients: Gather all ingredients and make sure the rice is cold and cooked to prevent clumping.

    Season Shrimp: In a medium bowl, toss the shrimp with Cajun seasoning until evenly coated. Set aside.

      Cook Shrimp: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove shrimp from the pan and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion, bell pepper, and minced garlic. Sauté for about 3-5 minutes or until the vegetables are softened.

          Add Rice: Stir in the cold jasmine rice, breaking apart any clumps with a spatula. Stir-fry for 2-3 minutes to heat through and let the rice catch some flavors from the pan.

            Incorporate Veggies: Add the frozen peas and carrots to the rice mixture. Continue stirring for another 2 minutes until everything is heated.

              Scramble Eggs: Push the rice mixture to one side of the skillet and pour the beaten eggs on the other side. Stir the eggs gently until scrambled and cooked through, then mix into the rice.

                Combine Ingredients: Add the shrimp back into the skillet, along with the soy sauce. Mix all the ingredients thoroughly until everything is well combined and heated through.

                  Season to Taste: Adjust seasoning with salt and pepper according to your taste preferences.

                    Garnish and Serve: Remove from heat, garnish with chopped green onions and fresh parsley. Serve hot.
