2 ½ cups all-purpose flour

1 tbsp cocoa powder

1 tsp baking soda

½ tsp salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 tbsp red food coloring

1 tsp vanilla extract

½ tsp almond extract

1 cup white chocolate chips

½ cup mini marshmallows (for decoration)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

      In a large bowl, cream the softened butter and granulated sugar using an electric mixer until light and fluffy (about 3-4 minutes).

        Beat in the egg, red food coloring, vanilla extract, and almond extract until well combined.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

            Fold in the white chocolate chips gently with a spatula until evenly distributed.

              Using a tablespoon, scoop out dough and roll it into balls, placing them onto the prepared baking sheets, spacing them about 2 inches apart.

                Gently press down the dough balls to flatten them slightly.

                  Decorate the top of each cookie with a mini marshmallow, pressing it down slightly so it sticks into the dough.

                    Bake for 10-12 minutes, or until the edges are just set and the cookies have a slight sheen. The centers may look a little underbaked; this is okay as they will continue to firm up while cooling.

                      Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
