1 box of red velvet cake mix (and ingredients as per the box)

1 cup cream cheese frosting (store-bought or homemade)

1 cup semi-sweet chocolate chips (for coating)

1 tablespoon coconut oil (for melting chocolate)

1 teaspoon vanilla extract

Optional: 1 cup crushed pecans or walnuts (for rolling)

Instructions
 

Bake the Cake: Preheat your oven as per the instructions on the cake mix box. Prepare the cake mix as directed and bake according to package instructions in a 9x13 inch pan. Once baked, allow it to cool completely in the pan on a wire rack.

    Crumble the Cake: Once the cake is cool, carefully remove it from the pan. Using your hands or a fork, crumble the cake into fine crumbs in a large mixing bowl.

      Mix with Frosting: Add the cream cheese frosting to the cake crumbs. Mix thoroughly until the crumbs are well combined and form a dough-like consistency.

        Roll into Balls: Using your hands, scoop out small portions of the cake mixture and roll them into 1-inch balls. Place the balls on a baking sheet lined with parchment paper. Repeat until all the mixture is rolled.

          Chill the Cake Balls: Place the baking sheet with cake balls in the refrigerator for at least 30 minutes to firm up.

            Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and completely melted.

              Dip the Cake Balls: Remove the cake balls from the refrigerator. Dip each cake ball into the melted chocolate using a fork, allowing excess chocolate to drip off. Make sure they are completely coated.

                Top It Off: Optional: If desired, roll the dipped cake balls in crushed nuts for added flavor and texture. Place the coated cake balls back on the parchment-lined baking sheet.
