Ingredients

1 box red velvet cake mix (plus ingredients required to prepare it)

1 cup cream cheese frosting

1 cup white chocolate chips

1 tablespoon coconut oil

1 teaspoon vanilla extract

Sprinkles or edible glitter for decoration

Lollipop sticks

Instructions

Bake the Cake: Prepare the red velvet cake according to the package instructions. Allow it to cool completely once baked.

Crumble the Cake: In a large bowl, crumble the cooled cake into fine crumbs using your hands or a fork. Ensure there are no large pieces.

Mix with Frosting: Add the cream cheese frosting to the cake crumbs. Mix until fully combined and the mixture holds together when squeezed.

Shape the Cake Pops: Scoop about 1 tablespoon of the mixture and roll it into a ball. Place all the balls onto a parchment-lined baking sheet. Repeat until all the mixture is used.

Chill the Cake Balls: Refrigerate the cake balls for about 30 minutes to an hour, until they are firm.

Melt Chocolate: In a microwave-safe bowl, melt the white chocolate chips and coconut oil together in 30-second intervals, stirring in between until smooth. Stir in the vanilla extract.

Dip the Sticks: Dip the end of each lollipop stick into the melted chocolate, then insert it about halfway into a cake ball. This helps keep the stick in place.

Coat the Cake Pops: Once all the sticks are inserted, dip each cake pop into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off.

Add Decorations: While the chocolate is still wet, quickly sprinkle with colorful sprinkles or edible glitter for a fun touch.

Set the Cake Pops: Place the cake pops upright in a piece of foam or a cake pop stand to set. Allow the chocolate to harden completely.

Prep Time: 30 minutes | Total Time: 2 hours | Servings: 12-15 pops
