1 ½ cups all-purpose flour

1 cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 cup buttermilk, room temperature

½ cup vegetable oil

2 large eggs, room temperature

1 tablespoon vanilla extract

1 tablespoon red food coloring

1 tablespoon cocoa powder

1 cup cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract (for cream cheese frosting)

Optional: chocolate shavings or sprinkles for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, baking powder, and salt until well combined.

      Mix Wet Ingredients: In another bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract, and mix until smooth. Then add the red food coloring and stir until evenly mixed.

        Combine Mixtures: Slowly add the wet ingredients to the dry ingredients, mixing just until combined. Do not over-mix; a few lumps are okay.

          Prepare Cocoa Mix: In a small bowl, combine 1 cup of the red velvet batter with the cocoa powder. Mix until smooth.

            Fill Cupcake Liners: Using an ice cream scoop or tablespoon, fill the liners halfway with the red velvet batter. Then add a dollop of the cocoa batter on top, and swirl gently with a toothpick or knife to create a marbled effect.

              Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                Cool: Allow the cupcakes to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

                  Prepare Cream Cheese Frosting: While the cupcakes cool, beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy.
