1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tbsp red food coloring

1 tsp vanilla extract

½ cup cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract (for filling)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt until well blended. Set aside.

      In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

        Add the egg, red food coloring, and vanilla extract to the butter-sugar mixture. Mix until thoroughly combined.

          Gradually add the dry ingredients to the wet mixture. Stir until combined, forming a soft dough.

            Using a small cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the cookies are set but still soft. Remove from the oven and let them cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

                While the cookies are cooling, prepare the cream cheese filling. In a bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.

                  Once the cookies are completely cool, turn half of them upside down and spread a generous amount of cream cheese filling on each. Top with another cookie, gently pressing down to create a sandwich.

                    For an extra touch, you can dust the finished Oreos with a sprinkle of cocoa powder or some red sugar for a festive look.
