1 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon cocoa powder

1 ½ cups vegetable oil

1 cup buttermilk

2 large eggs

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract (for cheesecake layer)

1 cup fresh strawberries, sliced (plus extra for garnish)

1 cup whipped cream (store-bought or homemade)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.

    In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder until combined.

      In a separate bowl, mix together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar. Combine the wet and dry ingredients until just smooth.

        Pour the batter into the prepared springform pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan on a wire rack.

          While the cake is cooling, prepare the cheesecake layer. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and continue mixing until well combined. Stir in the vanilla extract.

            Gently fold in the whipped cream to the cream cheese mixture until smooth and fluffy.

              Once the red velvet cake has completely cooled, carefully remove it from the springform pan. Place it on a serving plate.

                Spread the cheesecake mixture evenly over the top of the cooled red velvet cake. Decorate with sliced strawberries on top.

                  Chill the cheesecake in the refrigerator for at least 3 hours to allow it to set.

                    Before serving, garnish with additional whipped cream and fresh strawberry slices. Slice and serve chilled!
