Ingredients

1 loaf of rye bread, cut into cubes

3 cups sauerkraut, drained and squeezed dry

2 cups cooked corned beef, shredded

1 cup Swiss cheese, shredded

1 cup Thousand Island dressing

1 teaspoon caraway seeds (optional)

4 large eggs

1 cup milk

Salt and black pepper to taste

Fresh parsley, chopped for garnish

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

In a large mixing bowl, combine the cubed rye bread, sauerkraut, shredded corned beef, and Swiss cheese. Toss together to ensure an even distribution of ingredients.

In another bowl, whisk together the Thousand Island dressing, eggs, milk, caraway seeds (if using), salt, and black pepper until well combined.

Pour the egg mixture over the bread mixture and gently stir until all the bread is soaked and coated. Let it sit for about 10 minutes so the bread absorbs the liquid.

Pour the entire mixture into the prepared baking dish, spreading it evenly.

Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the center is set.

Remove from the oven and let it rest for about 5 minutes before slicing.

Serve warm, garnished with chopped parsley for a pop of color.
