Ribeye Steak with French Onions and French Fries

2 ribeye steaks (1 inch thick)

2 tablespoons olive oil

Salt and black pepper, to taste

2 large onions, thinly sliced

1 tablespoon butter

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

1 teaspoon dried thyme

4 large russet potatoes

Sea salt, for seasoning

Fresh parsley, chopped (for garnish)

Instructions
 

Start by preparing the fries. Wash and peel the russet potatoes, then cut them into thick sticks (about 1/4 inch wide). Place them in a bowl of cold water and let soak for at least 30 minutes to remove excess starch.

    While the fries are soaking, season the ribeye steaks with salt and black pepper on both sides. Rub with 1 tablespoon of olive oil and let them sit at room temperature for about 15-20 minutes.

      In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and sprinkle with a pinch of salt. Cook, stirring occasionally for about 10 minutes until they begin to caramelize.

        Stir in the balsamic vinegar, garlic powder, and thyme, and cook for another 5-10 minutes until the onions are deeply golden and fully caramelized. Set aside.

          Preheat the oven to 400°F (200°C). Once the fries have soaked, drain and pat them dry with a paper towel. Toss the potato sticks in a bowl with the remaining tablespoon of olive oil and season with sea salt.

            Spread the fries evenly on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, flipping halfway through, until golden and crispy.

              While the fries are baking, heat a grill pan or skillet over high heat. Once hot, add the ribeye steaks and sear for 4-5 minutes on each side for medium-rare, or adjust the time to your desired doneness.

                Allow the steaks to rest for about 5 minutes after cooking. This helps retain the juices.

                  To serve, place each ribeye steak on a plate topped with a generous portion of the caramelized French onions. Serve alongside the crispy French fries, garnished with chopped fresh parsley.
