1 lb lump crab meat, fresh or canned

1 lb large shrimp, peeled and deveined

4 cups fish stock or seafood broth

1 cup heavy cream

1 medium onion, finely chopped

2 cloves garlic, minced

1 stalk celery, finely chopped

1 carrot, finely chopped

2 tbsp tomato paste

1 bay leaf

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

1/4 cup dry white wine (optional)

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large, heavy-bottomed pot, heat olive oil over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and continue to sauté for another minute.

    Add Tomato Paste and Spices: Stir in the tomato paste, paprika, and cayenne pepper. Cook for an additional 2 minutes, stirring constantly to combine and toast the spices lightly.

      Deglaze the Pot: If using, pour in the white wine, scraping the bottom of the pot to release any browned bits. Allow the wine to evaporate almost completely.

        Build the Bisque Base: Add the fish stock (or seafood broth) and bay leaf into the pot. Bring to a simmer and let it cook for about 15 minutes, allowing all the flavors to meld together.

          Blend the Base: Remove the bay leaf and use an immersion blender to puree the mixture until smooth. Alternatively, you can transfer it to a blender in batches, but be careful of the hot liquid.

            Creamy Addition: Lower the heat and stir in the heavy cream. Bring it back to a gentle simmer, then fold in the crab meat and shrimp. Cook for an additional 5-7 minutes, until the shrimp are bright pink and cooked through. Season with salt and pepper to taste.

              Serve: Ladle the bisque into bowls and garnish with freshly chopped parsley. Serve with lemon wedges on the side to brighten the flavors.
