12 oz rigatoni pasta

1 cup walnuts, finely chopped

8 oz mushrooms, finely diced (cremini or button)

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 tbsp tomato paste

1 tbsp soy sauce or tamari

1 tsp dried Italian herbs (oregano, basil, thyme)

1/2 tsp red pepper flakes (optional, for heat)

2 tbsp olive oil

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Nutritional yeast (optional, for a cheesy flavor)

Instructions
 

Cook the Rigatoni: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to the package instructions until al dente. Drain and set aside.

    Prepare the Walnut Mushroom Mixture: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Then add the minced garlic and cook for an additional minute until fragrant.

      Add the Mushrooms: Stir in the diced mushrooms and cook for about 7-10 minutes, until they release their moisture and start to brown.

        Incorporate Walnuts & Flavorings: Once the mushrooms are cooked, add the finely chopped walnuts, tomato paste, soy sauce, dried herbs, and red pepper flakes. Stir to combine and cook for another 2-3 minutes.

          Add Tomatoes: Pour in the crushed tomatoes, season with salt and pepper, and stir well to combine. Allow the sauce to simmer for about 10-15 minutes, stirring occasionally until it thickens slightly.

            Combine Pasta and Sauce: Add the cooked rigatoni to the skillet with the walnut mushroom sauce, gently tossing to coat the pasta in the sauce. Cook for an additional 2 minutes together to meld the flavors.

              Serve: Remove from heat, garnish with fresh basil or parsley, and sprinkle with nutritional yeast if desired. Serve warm and enjoy!
