In a large mixing bowl, combine the baby carrots, minced garlic, olive oil, salt, black pepper, and paprika. Toss until the carrots are well coated.
Spread the carrot mixture in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20 minutes.
After 20 minutes, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the carrots.
Return the baking sheet to the oven and continue roasting for an additional 10-15 minutes, or until the carrots are tender and the cheese is golden and bubbly.
Once done, remove from the oven, and garnish with freshly chopped parsley before serving.
