Instructions
Preheat your oven to 375°F (190°C).
Cook the cheese tortellini according to the package directions until al dente, then drain and set aside.
In a large mixing bowl, combine the roasted red peppers, ricotta cheese, 1 cup of mozzarella cheese, and grated Parmesan cheese. Mix well until combined.
Add the marinara sauce, minced garlic, dried oregano, and red pepper flakes (if using) to the mixture. Stir well to incorporate all the ingredients.
Gently fold the cooked tortellini into the mixture, ensuring that the tortellini are well coated with the sauce and cheese mix. Season with salt and pepper to taste.
Transfer the tortellini mixture into a greased 9x13 inch baking dish. Spread it out evenly.
Top the dish with additional shredded mozzarella cheese to create a bubbly and golden crust when baked.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let it cool for about 5 minutes before serving.
Garnish with fresh basil leaves before serving for a burst of color and flavor.
Notes
For extra flavor, add more garlic or herbs as desired.
