Ingredients

4 bone-in pork chops (about 1 inch thick)

4 tablespoons unsalted butter

3 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried rosemary)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 lemon (zested and juiced)

Fresh rosemary sprigs for garnish (optional)

Instructions

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt and black pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat.

Sear the Pork Chops: Once the oil is hot, add the pork chops to the pan. Sear for about 4-5 minutes on one side until golden brown. Flip the chops and cook for an additional 4 minutes on the other side.

Make the Garlic Butter: Reduce the heat to medium-low. Push the chops to one side of the skillet and add the butter, minced garlic, and chopped rosemary. Let the butter melt and bubble for a minute, and then spoon the melted garlic butter over the chops.

Add Lemon Flavors: Pour in the lemon juice and zest over the chops for an added burst of freshness.

Finish Cooking: Continue to cook for another 2-3 minutes, spooning the butter over the chops to ensure they are fully coated and cooked to your desired doneness (145°F for medium).

Rest and Serve: Remove the pork chops from the skillet and let them rest on a plate for 5 minutes. Drizzle extra garlic butter from the pan over the chops before serving. Garnish with fresh rosemary sprigs if desired.
