2 large potatoes, peeled and grated

1 small onion, finely chopped

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup pizza sauce

1/2 cup assorted toppings (e.g., sliced bell peppers, mushrooms, olives, pepperoni)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a large bowl, combine the grated potatoes and chopped onion. Squeeze out excess moisture using a clean kitchen towel.

      Add the mozzarella cheese, Parmesan cheese, beaten egg, oregano, garlic powder, salt, and pepper to the potato mixture. Mix thoroughly until well combined.

        Grease a round baking sheet or pizza pan with cooking spray or olive oil. Spread the potato mixture evenly onto the pan, pressing down with your hands to form a pizza crust.

          Bake the crust in the preheated oven for about 20-25 minutes, or until it becomes golden brown and crispy on the edges.

            Remove the potato crust from the oven and spread the pizza sauce over it, leaving a small border around the edges.

              Top the sauce with your choice of toppings, distributing them evenly, followed by a sprinkle of additional mozzarella cheese if desired.

                Return the Rösti pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                  Remove from the oven and let it cool for a couple of minutes before slicing.
