1 rotisserie chicken, shredded

8 oz (225g) mushrooms, sliced (cremini or button)

1 medium onion, diced

2 cloves garlic, minced

3 carrots, diced

2 celery stalks, diced

6 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5-7 minutes until the vegetables are tender.

    Add the minced garlic and sliced mushrooms to the pot. Cook for another 3-4 minutes, stirring occasionally, until the mushrooms are softened and have released their moisture.

      Pour in the chicken broth and add the shredded rotisserie chicken, dried thyme, and dried rosemary. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes.

        Once the soup has simmered, stir in the heavy cream and season with salt and pepper to taste. Allow the soup to heat through for an additional 5 minutes.

          Remove from heat and garnish with fresh chopped parsley before serving.
