1 can (14 oz) wild-caught salmon, drained and flaked

2 medium potatoes, peeled and cubed

1/4 cup green onions, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup breadcrumbs (plus extra for coating)

1 large egg, beaten

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil for frying

Boil the Potatoes: Place the cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and mash until smooth.

    Mix the Salmon Mixture: In a large mixing bowl, combine the flaked salmon, mashed potatoes, green onions, parsley, breadcrumbs, beaten egg, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Form the Croquettes: With clean hands, shape the mixture into small patties, about 2 inches in diameter. For a crispier texture, roll the patties in additional breadcrumbs until coated.

        Fry the Croquettes: Heat a generous amount of olive oil in a skillet over medium heat. Once hot, carefully add the croquettes, making sure not to crowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

          Drain and Serve: Remove the croquettes from the pan and place them on a paper towel-lined plate to drain excess oil. Serve warm, garnished with additional parsley and a side of lemon wedges.
