1 can (14 oz) salmon, drained and flaked

1/2 cup breadcrumbs (plus more for coating)

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely chopped

1 large egg, beaten

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon lemon juice

Salt and pepper to taste

Olive oil for frying

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped green onions, and red bell pepper. Mix well to combine all the ingredients.

    In a separate small bowl, whisk together the beaten egg, mayonnaise, Dijon mustard, garlic powder, lemon juice, salt, and pepper.

      Pour the egg mixture into the salmon mixture and stir until everything is evenly incorporated.

        Using your hands, shape the mixture into patties about 2 inches in diameter. You should be able to make around 8 patties.

          Coat each patty in additional breadcrumbs to create a crispy outer layer.

            In a large skillet, heat about 1/4 cup of olive oil over medium heat.

              Once the oil is hot, carefully place the salmon croquettes in the skillet, cooking in batches if necessary. Fry for about 3-4 minutes on each side, until golden brown and crispy.

                Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain any excess oil.

                  Serve warm with your favorite dipping sauce, such as tartar sauce or a lemon aioli.
