Ingredients
  

2 salmon fillets (about 6 ounces each)

4 cups mixed salad greens (arugula, spinach, and romaine)

1 orange, segmented

1 grapefruit, segmented

1 ripe avocado, sliced

¼ red onion, thinly sliced

½ cup cherry tomatoes, halved

2 tablespoons olive oil

1 tablespoon honey

Juice of 1 lemon

Salt and pepper to taste

Optional: ¼ cup toasted walnuts or almonds for crunch

Instructions
 

Preheat your grill or grill pan over medium-high heat. Season the salmon fillets with salt, pepper, and a drizzle of olive oil.

    Place the salmon on the grill and cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. Remove from heat and let cool slightly.

      While the salmon is grilling, prepare the salad. In a large mixing bowl, combine the mixed salad greens, orange segments, grapefruit segments, sliced avocado, red onion, and cherry tomatoes.

        In a small bowl, whisk together the olive oil, honey, lemon juice, and a pinch of salt and pepper to create a dressing.

          Once the salmon has cooled enough to handle, flake it into large chunks and add it to the salad bowl.

            Drizzle the dressing over the salad and gently toss everything together to coat the ingredients evenly without breaking the avocado too much.

              If desired, sprinkle the toasted walnuts or almonds over the top for an added crunch.
