2 salmon fillets

200g shrimp, peeled and deveined

2 cups broccoli florets

1 cup sweet corn (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sauce: In a mixing bowl, combine the cream cheese and shredded cheddar cheese. Mix in the minced garlic, paprika, salt, and pepper until smooth and creamy. Set aside.

      Sauté the Shrimp: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and cook for about 3-4 minutes, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

        Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2-3 minutes to slightly soften. Drain and transfer to an ice bath to stop the cooking process.

          Combine Ingredients: In a large baking dish, combine the blanched broccoli, sweet corn, and sautéed shrimp. Place the salmon fillets on top.

            Add the Cheese Mixture: Spread the cheesy mixture evenly over the salmon and sprinkle any remaining cheese over the top.

              Bake: Drizzle the remaining tablespoon of olive oil over the dish. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the salmon flakes easily with a fork and the cheese is bubbly and golden.

                Garnish and Serve: Once done, remove from the oven and let sit for a few minutes. Garnish with fresh chopped parsley before serving.
