4 boneless, skinless chicken breasts

1 cup fresh salsa verde (store-bought or homemade)

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 cup queso fresco, crumbled

1 avocado, diced

2 teaspoons olive oil

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large baking dish, drizzle the olive oil and season the chicken breasts with ground cumin, garlic powder, salt, and pepper on both sides. Place the chicken in the dish.

      Pour the fresh salsa verde evenly over the chicken, ensuring it is well-coated.

        Scatter the corn and black beans around the chicken in the baking dish, allowing the ingredients to meld together as it cooks.

          Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

            After 25 minutes, remove the foil and sprinkle the crumbled queso fresco over the chicken.

              Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).

                Once done, remove from the oven and let it rest for a few minutes. Garnish with diced avocado and fresh cilantro.

                  Serve the chicken with lime wedges for an extra zing.
