4 medium red potatoes, diced

1 large onion, finely chopped

2 cloves garlic, minced

2 medium bell peppers (one red and one green), diced

1 cup diced tomatoes (canned or fresh)

2 tablespoons Hungarian paprika

1 teaspoon smoked paprika

1 teaspoon caraway seeds

½ teaspoon cayenne pepper (optional, for heat)

3 cups vegetable broth

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced bell peppers to the pot and cook for another 3-4 minutes until they soften.

        Sprinkle in the Hungarian paprika, smoked paprika, caraway seeds, and cayenne pepper (if using), stirring continuously for about 2 minutes to toast the spices.

          Add the diced tomatoes and cook for 3 minutes, allowing them to merge with the spices and vegetables.

            Pour in the vegetable broth and bring to a boil.

              Once boiling, add the diced red potatoes. Reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the potatoes are tender.

                Season with salt and pepper to taste, adjusting based on your preference.

                  Serve hot, garnished with freshly chopped parsley.
