1 pound breakfast sausage (bulk, not in casings)

1 cup diced onion

1 cup diced bell pepper (red or green)

8 large eggs

1 cup milk

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

6 cups cubed day-old bread (preferably whole grain or sourdough)

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish lightly with non-stick spray or butter.

    In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbly, about 5-7 minutes. Drain any excess fat.

      Add the diced onion and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables are soft. Remove from heat and set aside.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until fully combined.

          In the prepared baking dish, layer half of the cubed bread on the bottom. Top with half of the sausage mixture and half of the shredded cheddar cheese.

            Pour half of the egg mixture over the layers. Repeat the layering with the remaining bread, sausage, cheese, and finally the rest of the egg mixture on top. Ensure the bread is evenly soaked with the egg mixture.

              Allow the casserole to rest for 15 minutes to absorb the flavors.

                Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden and bubbly. A knife inserted into the center should come out clean.

                  Once baked, let the casserole cool slightly for about 10 minutes before slicing.

                    Garnish with fresh chopped parsley before serving.
