1 medium onion, diced

1 red bell pepper, diced

1 cup fresh spinach, roughly chopped

8 large eggs

1 cup milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups shredded cheddar cheese

1 cup diced tomatoes (fresh or canned, drained)

Fresh herbs for garnish (optional, such as parsley or chives)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the sausage: In a large skillet over medium heat, crumble and cook the sausage until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary, then remove from heat.

      Sauté the vegetables: In the same skillet, add the diced onion and red bell pepper to the sausage. Cook for about 3-4 minutes until the vegetables are softened. Stir in the chopped spinach and cook until wilted, about 1 minute. Remove from heat.

        Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

          Combine ingredients: Spread the sausage and vegetable mixture evenly in the greased baking dish. Pour the egg mixture over the top. Gently push down any pieces of sausage and vegetables to ensure they're submerged.
