1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

3 celery sticks, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

6 cups chicken or vegetable broth

2 cups kale, stems removed and chopped

1 can (15 oz) diced tomatoes, undrained

1 bay leaf

Salt and pepper to taste

1 tablespoon olive oil

Optional: Grated Parmesan cheese for topping

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes, or until the vegetables begin to soften.

      Add the minced garlic and cook for an additional minute until fragrant.

        Remove the casing from the Italian sausage and crumble it into the pot. Cook until browned, about 5-8 minutes, breaking it up with a spoon as it cooks.

          Stir in the dried thyme and smoked paprika, allowing the flavors to meld for about a minute.

            Pour in the chicken or vegetable broth and add the diced tomatoes and bay leaf. Stir well to combine.

              Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, allowing all the flavors to come together.

                Add the chopped kale and cook for an additional 5 minutes, until the kale is wilted.

                  Remove the bay leaf and season the soup with salt and pepper to taste.

                    Serve hot, topped with grated Parmesan cheese if desired.
