12 large jalapeño peppers, halved and seeded

1 lb (450g) spicy Italian sausage, casing removed

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup finely chopped green onions

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/4 cup bread crumbs (optional, for topping)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Jalapeños: Cut the jalapeños in half lengthwise and remove the seeds (you can wear gloves for this to avoid irritation). Place them cut-side up on the prepared baking sheet.

      Cook the Sausage: In a medium skillet over medium heat, crumble and cook the spicy Italian sausage until browned and cooked through, about 5-7 minutes. Drain any excess fat.

        Make the Filling: In a large bowl, combine the cooked sausage, softened cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well blended.

          Stuff the Peppers: Using a spoon or a piping bag, generously fill each jalapeño half with the sausage and cheese mixture.
