Ingredients
  

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, with juices

4 cups chicken or vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 package (9 oz) cheese tortellini

2 cups fresh spinach or kale

Salt and pepper to taste

Grated Parmesan cheese, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it into smaller pieces as it cooks. Sauté until browned, about 5–7 minutes.

    Once the sausage is browned, add the diced onion and minced garlic. Cook until the onion is translucent, about 3–4 minutes.

      Stir in the diced carrots and celery, cooking for another 5 minutes until they start to soften.

        Add the diced tomatoes (with their juices), chicken or vegetable broth, dried basil, dried oregano, and red pepper flakes (if using) to the pot. Bring to a simmer and let cook for 15 minutes to allow the flavors to meld.

          Stir in the tortellini, cooking according to the package instructions until al dente (usually about 3–5 minutes).

            Just before serving, add the fresh spinach or kale to the soup and stir until wilted. Season with salt and pepper to taste.

              Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.
