Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, chopped

3 cloves garlic, minced

3 medium carrots, diced

3 stalks celery, diced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 can (14.5 oz) diced tomatoes, with juices

6 cups chicken or vegetable broth

9 ounces cheese tortellini (fresh or frozen)

2 cups fresh spinach leaves

Salt and pepper, to taste

Fresh parsley or basil, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven over medium heat, crumble the Italian sausage and cook until browned, about 5-7 minutes. Break it up into small pieces as it cooks.

    Sauté Vegetables: Add the chopped onion, garlic, carrots, and celery to the pot with the sausage. Sauté for about 5-6 minutes, or until the vegetables are tender.

      Add Seasonings: Stir in the dried oregano, dried thyme, and season with salt and pepper. Cook for another minute to allow the spices to become fragrant.

        Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the chicken or vegetable broth. Bring the mixture to a boil.

          Cook Tortellini: Once boiling, reduce the heat to a simmer and add the tortellini. Cook according to the package instructions, usually around 3-5 minutes for fresh or 7-10 minutes for frozen.

            Incorporate Spinach: When the tortellini is cooked al dente, stir in the fresh spinach leaves and cook until wilted, about 2-3 minutes.

              Taste and Adjust: Taste the soup and adjust the seasoning with more salt and pepper if needed.

                Serve: Ladle the soup into bowls and garnish with fresh parsley or basil. If desired, sprinkle grated Parmesan cheese on top before serving.
