1 cup non-alcoholic beer (or apple cider for a unique twist)

8 ounces salted pork belly, cut into small cubes

2 tablespoons olive oil

2 teaspoons brown sugar

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Prepare the Pork Belly: In a large skillet, heat the olive oil over medium heat. Add the salted pork belly cubes and cook until they are crispy, about 8-10 minutes. Stir occasionally to ensure even cooking. Once crispy, remove from the skillet and set aside, leaving the rendered fat in the pan.

    Sauté the Onions: In the same skillet, add the thinly sliced onions to the rendered pork fat. Sauté for 5 minutes, stirring occasionally until they start to soften.

      Add Flavor: Sprinkle the brown sugar and thyme over the onions. Continue to cook for an additional 10-12 minutes, stirring occasionally until the onions are caramelized and fully softened.

        Infuse with Beer: Carefully pour the non-alcoholic beer over the caramelized onions. Stir well, scraping up any browned bits from the bottom of the skillet. Allow it to simmer on low heat for about 10-15 minutes until the liquid reduces and the onions have absorbed the flavors. Season with salt and pepper to taste.

          Combine and Serve: Stir the crispy salted pork back into the onion mixture. Cook together for an additional 2-3 minutes to heat everything through.
