Ingredients
  

2 cups cooked chicken, shredded

4 strips bacon, cooked and crumbled

1 cup romaine lettuce, chopped

1 medium tomato, diced

1/3 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper, to taste

4 slices of whole grain bread

Optional: slices of avocado for extra creaminess

Instructions
 

In a medium mixing bowl, combine the shredded chicken, crumbled bacon, chopped romaine lettuce, and diced tomato.

    In a separate small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until well combined.

      Pour the dressing over the chicken mixture and stir gently until everything is evenly coated.

        Toast the slices of whole grain bread until golden brown.

          Assemble the sandwiches by spreading a generous portion of the chicken salad on two slices of the toasted bread. If using, add slices of avocado on top for added richness.

            Top with the remaining bread slices. Cut the sandwiches in half and serve immediately.
