1 pound breakfast sausage (mild or spicy, based on preference)

6 large eggs

2 cups milk

1 cup shredded sharp cheddar cheese

1 cup diced bell peppers (red, green, or a mix)

1 cup diced onion

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

4 cups cubed bread (preferably day-old or crusty bread)

1/2 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with non-stick spray or butter.

    In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it up into crumbles as it cooks. Drain any excess grease and set aside.

      In a mixing bowl, whisk together the eggs, milk, garlic powder, thyme, salt, and pepper until well combined.

        In the prepared baking dish, spread the cubed bread evenly across the bottom. Layer the cooked sausage, diced bell peppers, and diced onion over the bread.

          Pour the egg mixture over the bread and sausage, making sure to evenly coat everything. Gently press down with a spatula to help the bread absorb some of the egg mixture.

            Sprinkle the shredded cheddar cheese generously over the top, followed by the grated Parmesan cheese for an extra savory crust.

              Bake in the preheated oven for about 35-40 minutes, or until the casserole is puffed, set in the center, and golden brown on top.

                Once done, remove from the oven and let it cool for 5-10 minutes before slicing and serving.
