1 large onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 red bell pepper, diced

4 cups vegetable broth

1 can (14 oz) diced tomatoes, with juice

2 teaspoons dried oregano

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery; sauté for about 5 minutes until they begin to soften.

    Stir in the minced garlic and red bell pepper; cook for an additional 3 minutes, stirring occasionally.

      Add the drained mixed beans, diced tomatoes (with juice), vegetable broth, dried oregano, smoked paprika, cumin, salt, and pepper. Bring the mixture to a boil.
