1.5 lbs beef chuck roast

2 tablespoons olive oil

1 packet ranch seasoning mix

1 packet au jus seasoning mix

1 cup beef broth

1/2 cup banana pepper rings (with juice)

1 medium onion, sliced

3 cloves garlic, minced

8 oz egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet or instant pot, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then add it to the skillet. Sear on all sides until browned, about 3-4 minutes per side.

    Add Seasonings: Sprinkle the ranch seasoning and au jus seasoning over the seared roast, followed by the sliced onion and minced garlic. Pour in the beef broth and the banana pepper rings with juice.

      Cook the Beef: If using a slow cooker, transfer the mixture to the cooker and cook on low for 8 hours or high for 4 hours, until the beef is tender. If using an instant pot, seal the lid and cook on manual high pressure for 60 minutes, then let the pressure release naturally.

        Shred the Beef: Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot, mixing it with the juices and vegetables.

          Cook the Noodles: In a separate pot, cook the egg noodles according to package instructions. Drain and set aside.

            Combine and Serve: Fold the cooked noodles into the beef mixture, ensuring they are well coated with the savory sauce. Taste and adjust seasoning if necessary.
