4 medium sweet potatoes, thinly sliced

2 cups heavy cream

1 cup sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup green onions, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Grease a 9x13 inch baking dish with butter.

      In a saucepan over medium heat, melt the butter and sauté the minced garlic for about 1 minute, until fragrant.

        Add the heavy cream to the saucepan, stirring continuously. Bring to a gentle simmer, then add the smoky paprika, fresh thyme, salt, and pepper. Stir well and remove from heat.

          Layer half of the sliced sweet potatoes evenly in the bottom of the baking dish.

            Pour half of the cream mixture over the first layer of sweet potatoes, followed by half of the cheddar and Gruyère cheeses.

              Repeat the layers with the remaining sweet potatoes, cream mixture, and cheeses.

                Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                  Remove the foil and bake for an additional 15-20 minutes, until the top is golden and bubbly. The sweet potatoes should be tender when pierced with a fork.

                    Once out of the oven, let it sit for about 10 minutes to set, then garnish with chopped green onions before serving.
