2 filet mignon steaks (6-8 oz each)

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

2 shallots, finely chopped

2 tablespoons green peppercorns, rinsed and lightly crushed

1 cup heavy cream

1 teaspoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Take the filet mignon out of the refrigerator and allow it to come to room temperature for about 30 minutes.

    Season both sides of the filet mignon generously with salt and black pepper.

      In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the filet mignon to the skillet and sear for 4-5 minutes per side for medium-rare (or until desired doneness). Add the butter in the last minute of cooking, spooning it over the steaks. Remove the steaks from the skillet and let them rest for at least 5 minutes.

        In the same skillet, reduce the heat to medium and add the chopped shallots. Sauté for about 2-3 minutes until they are softened and fragrant.

          Add the crushed green peppercorns to the skillet and stir for about a minute.

            Pour in the heavy cream and add the Dijon mustard, stirring to combine everything. Simmer the sauce for about 5-7 minutes until it thickens slightly. Season with salt and pepper to taste.

              To serve, place each filet mignon on a plate and generously drizzle the shallot peppercorn cream sauce over the top.

                Garnish with fresh chopped parsley for a pop of color.
