Cook the Noodles: Bring a large pot of salted water to a boil. Add the spaghetti or noodles and cook according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Sauce: In a small bowl, mix together the soy sauce, honey or agave syrup, rice vinegar, grated ginger, and red pepper flakes. Whisk until well combined and set aside.
Sauté the Garlic: In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and the white parts of the green onions. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
Combine Everything: Add the cooked noodles to the skillet with the garlic and onion mixture. Pour the sauce over the noodles, and toss everything together until the noodles are well coated in the sauce and heated through (about 2-3 minutes).
Finishing Touches: Remove the skillet from the heat. Stir in the toasted sesame seeds and the green parts of the green onions, mixing well.
Serve: Plate the noodles in individual bowls and garnish with freshly chopped cilantro or parsley, and extra sesame seeds if desired.

Adjust red pepper flakes to taste for desired spiciness.
