2 cups cooked, shredded chicken

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cooked rice (white or brown)

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

1 ripe avocado, diced

1/2 cup sour cream

1/2 cup salsa

4 large flour tortillas

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Prepare the Ingredients: Begin by ensuring all your ingredients are prepped. Shred the cooked chicken, rinse the black beans, and dice the tomatoes and avocado. If you haven’t cooked your rice yet, do so according to package instructions and set aside to cool.

    Warm the Tortillas: In a large skillet over medium heat, warm each tortilla for about 15 seconds on each side until they are pliable. This will make it easier to layer and roll them later.

      Assemble the Burritos: Lay one tortilla on a clean surface.

        - Start by spreading a generous spoonful of salsa in the center.

          - Add about 1/4 cup of shredded chicken over the salsa.

            - Next, layer 2 tablespoons of black beans, followed by corn, and then the cooked rice.

              - Top with diced tomatoes, shredded cheese, diced avocado, and a drizzle of sour cream.

                Roll the Burrito: Fold the sides of the tortilla inward over the filling, then roll it tightly from the bottom up. Make sure it’s secure to hold in the fillings.

                  Repeat and Cook: Repeat the rolling process for the remaining tortillas. If desired, place the burritos seam-side down in a heated skillet over medium heat to toast them for a couple of minutes, making them crispy and warm.

                    Serve: Remove the burritos from the skillet and slice in half if desired. Garnish with fresh cilantro and serve with lime wedges on the side, alongside extra salsa or sour cream for dipping.
