4 boneless, skinless chicken thighs

1 cup salsa (your choice of mild or spicy)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium red onion, cut into wedges

1 cup canned black beans, drained and rinsed

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the chicken thighs, salsa, ground cumin, garlic powder, paprika, olive oil, salt, and pepper. Mix well to ensure the chicken is evenly coated in the salsa and spices.

      On a rimmed sheet pan, spread the sliced bell peppers, onion wedges, and black beans evenly, creating a bed for the chicken.

        Place the marinated chicken thighs on top of the vegetable bed, pouring any remaining salsa over the chicken and vegetables.

          Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (reaches an internal temperature of 165°F/75°C) and the vegetables are tender.

            Once cooked, remove from the oven and let it rest for 5 minutes.

              Garnish with fresh chopped cilantro before serving.
