1 lb boneless chicken thighs, cut into bite-sized pieces

1 bell pepper (red or yellow), chopped

1 cup pineapple chunks (fresh or canned)

1 medium onion, chopped

2 cups broccoli florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

¼ cup soy sauce

¼ cup rice vinegar

3 tablespoons brown sugar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds and chopped green onions for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the chicken pieces, chopped bell pepper, onion, broccoli, and pineapple.

      Drizzle the olive oil over the mixture and add garlic powder, ginger powder, salt, and pepper. Toss well to ensure the chicken and vegetables are coated evenly.

        Spread the mixture in a single layer on a large sheet pan.

          In a small bowl, whisk together the soy sauce, rice vinegar, and brown sugar until the sugar is dissolved. Pour this sauce over the chicken and veggies on the pan.

            Bake in the preheated oven for about 20 minutes.

              After 20 minutes, remove the sheet pan from the oven. Stir the contents, then return to the oven for another 10 minutes.

                In the last 5 minutes, add the cornstarch and water mixture to the pan, stirring to combine. This will help thicken the sauce.

                  Bake for the final 5 minutes until everything is cooked through, the chicken is golden, and the broccoli is vibrant green.

                    Once done, remove from the oven and allow to cool slightly before serving.

                      Garnish with sesame seeds and chopped green onions for a fresh pop of color and flavor.
