1 lb ground lamb (or beef, if preferred)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 teaspoon dried thyme

1 teaspoon rosemary

Salt and pepper to taste

4 large potatoes, peeled and cubed

1/2 cup milk

4 tablespoons butter

1/2 cup shredded cheddar cheese (optional)

Prepare the Potatoes: In a large pot, place the cubed potatoes, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Make the Mash: Add butter and milk to the potatoes, then mash until smooth and creamy. Season with salt and pepper to taste. Set aside.

      Cook the Meat Filling: In a large skillet over medium heat, add the ground lamb (or beef) and cook until browned, breaking it up as it cooks. Drain excess fat if needed.

        Add Veggies: Stir in the diced onion, garlic, and carrots to the meat. Cook for about 5-7 minutes until the vegetables begin to soften.

          Flavor the Filling: Add in the tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, salt, and pepper. Stir well and let the mixture simmer for about 10 minutes, allowing the flavors to meld. Add the frozen peas and mix well to combine.

            Assemble the Pie: Preheat your oven to 400°F (200°C). In a greased baking dish, spread the meat filling evenly at the bottom. Spoon the creamy mashed potatoes over the top and spread them out with a spatula. If you’re using cheese, sprinkle it on top of the mashed potatoes.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the potatoes start to turn golden and the filling is bubbling.

                Cool and Serve: Once done, remove the Shepherd's Pie from the oven and allow it to cool for about 5 minutes before serving.
